When it came to school lunches, the first dish I skipped was stir-fried eggplant, so I thought eggplant was an out-of-grade ingredient.
But when I tried the Japanese-style grilled eggplant dish and the Chinese-style fish-based eggplant dish, I thought, wow, what a delicious ingredient it was. Even Western-style eggplants are made delicious by topping them with ragu sauce, just like steak.
Korean-style eggplant stir-fry seems to be the most degraded version of the delicious food ingredient called eggplant.
