Why do razor blades wear out even though they are more than 50 times harder than hair?

Unless it is a single crystal, mechanical materials inevitably have grain boundaries, and brittle fracture of the material proceeds along grain boundaries where the bonding force is relatively weak. Therefore, the material wears along this defect.
