In many cases, dry noodles are preferred over fresh noodles, especially to achieve an al dente texture. The chef wanted the noodles to be al dente to the point of undercooking them, so the prototype pasta would be better here.

Most top restaurants in Italy use dry pasta for dishes like aglio olio, and fresh noodles for pasta like ragu.

Gordon Ramsay can’t be the standard for all cuisines. (He’s not Italian) Dry pasta is better for the al dente texture, and there wasn’t enough time to pull out and dry the fresh noodles.
