The research institute discovered that there are 58 types of functional lactic acid bacteria in kimchi.

These lactic acid bacteria are known to have anti-inflammatory, anti-obesity, brain function improvement, and anti-aging functions.

Some have even been found to play a role in suppressing tumors and preventing cancer.

Representative anti-cancer lactic acid bacteria in kimchi include Weissella cibaria and Lactobacillus sakei.

Meanwhile, the U.S. government completely overhauled national dietary guidelines for the first time in five years, sending a strong message: “Eat real food.”

This is the first time that kimchi has been listed as a representative healthy food in the U.S. government’s official dietary guidelines.

On the other hand, ultra-processed foods were actually recommended to be eliminated.

Regarding ultra-processed foods that have gone through multiple stages of factory processing and food additives, such as sausages, cookies, and frozen pizza, the guidelines clearly state, “Do not consume.”
